One of my favorite parts of summer is all the fresh Herbs and Vegetables. I love using fresh ingredients in all of my recipes when possible. Don’t you just love being able to walk out into your yard and pick the herbs that you have grown. There is just something so rewarding about that! I really love flavored olive oil and I use it in fresh salads. But there are some rules you have to follow. First of all the good olive oil has to be virgin. The bottles, it is glass, not only for aesthetic reasons but because the plastic deteriorates the odor of the oil after a certain time. Also it is advisable to fasten with cork stopper and not because it is more airtight cork. Herbs to better convey their flavors better be fresh and not dried. If the hers are fresh , you have to wash them very well before putting in the oil and drain on a clean towel. Stir well before each use. Everything keep away from sunlight and heat sources. Here is my simple recipe Olive oil flavored with oregano Used in summer salads and grilled fish. Three sprigs oregano 2 tsp. tablespoon black peppercorns 2 cups extra virgin olive oil A bottle of dry, clean, airtight enough to fit two cups of oil. Put the bottle all ingredients and seal. Place it in a dark, cool cupboard. The roll after a week taking care to shake and then. Our oil kept for six months and before each use to mix well. |
